(For all ingredients, please use organic versions if available)   Apple Sauce  8–10 tart apples (washed and cored)  1–3 cups apple juice  Dark brown sugar (optional)  Lemon juice (optional)  Cinnamon powder (optional) 
  Guacamole  1 large avocado  1 large tomato  1 teaspoon lime juice  ½ teaspoon garlic, minced  1 teaspoon cilantro
  Potato Kugel  5 potatoes  2 onions  ½ cup carrots  6 tablespoons potato starch  ¼ cup matzo meal or all-purpose flour  1 teaspoon salt  ¼ teaspoon pepper  ¼ teaspoon celery seed  ½ cup olive oil  Serve with apple sauce, guacamole,or vegan sour cream 
  Cauliflower and Broccoli Latkes  1 small head   fresh cauliflower  1 small head   fresh broccoli  6 tablespoons   potato starch  ½ cup matzo meal   or whole wheat flour  1 teaspoon salt  ½ teaspoon white pepper  Canola oil, for frying 
  Leek Latkes  6 leeks  2 tablespoons canola oil for sautéing + more for frying  1 small onion, diced  6 cloves of garlic, diced  4 shallots  ½–1 cup pine nuts  ½ bunch cilantro, chopped  4 tablespoons potato starch  1/3 cup vegan Parmesan cheese  Salt and fresh ground pepper to taste  ½ cup matzo meal or bread crumbs
