Kare-Kare:
- 5 tablespoons cooking oil
- 5 garlic cloves, pressed and minced
- 1 large onion, finely diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 5 cups vegetable broth
- 1 package of vegan mutton or 1 block of tofu
- 5 Asian eggplants, cut in 2½ inch sections
- 1 bunch of long green beans, cut 2 inches long
- 4 bunches of baby bok choy
- 5 tablespoons toasted rice flour or flour of choice
- ½ cup peanut butter or freshly ground peanuts
- Water
Side Sauce:
- 2 tablespoons cooking oil
- 2 garlic cloves, pressed and minced
- 1 large tomato, chopped
- 1 tablespoon sugar or maple syrup
- 1 tablespoon vinegar
- 1 cup or small jar of black beans
