- 1 sweet potato (or yam)
- 2 cups baby carrots (or other carrot varieties)
- 1-15 ounce can organic diced tomatoes (or fresh tomatoes)
- 2-15 ounce cans organic red kidney beans
- 1-15 ounce can organic light coconut milk
- 1 tablespoon olive oil
- 1 cup vegetable broth
- 2 teaspoons curry powder
- 1/2 teaspoon Italian Seasoning
- 1/4 teaspoon red pepper Flakes
- 1/2 teaspoon ground all-spice (or pumpkin pie spice)
- Sea salt
- Black pepper
Tropical Pineapple Smoothie:
- 2 cups organic soymilk (or rice or almond milk)
- 1-20 ounce can crushed Pineapple
- 3 tablespoons organic Sugar
- 1 teaspoon vanilla extract
- 3 tablespoons coconut milk
- 2 cups ice cubes
