½ teaspoon lemon zest
½ teaspoon fresh grated ginger
1 teaspoon of vanilla
2 tablespoons oil (neutral-tasting oil like canola or sunflower oil)
⅓ cup lemon juice
⅔ a cup non-dairy milk (rice, almond, soy, or hemp milk)
Extra oil or vegan butter to coat the skillet
Serve pancakes with vegan butter, maple syrup, and fresh fruit
