INGREDIENTS:
  • 2 cup flour, white or brown
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • ½ tsp salt
  • 3 tsp egg replacer
  • ¾ cup vegetable oil
  • 1 cup soy milk
  • 1 tbsp vinegar
  • 1½ cup sugar, white or brown
  • 2 cup grated carrot
  • 1 cup crushed pineapples
  • ½ cup dried coconut
Icing:
  • ½ cup soy butter
  • 4 oz vegan cream cheese (Tofutti or Yoso Spreadables)
  • 2 cup icing sugar
  • 1 tsp vanilla
