Traditional Filipino Rich and Savory Peanut Stew (Kare-Kare) (In Tagalog)

INGREDIENTS:

Kare-Kare:
  • 5 tablespoons cooking oil
  • 5 garlic cloves, pressed and minced
  • 1 large onion, finely diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 5 cups vegetable broth
  • 1 package of vegan mutton or 1 block of tofu
  • 5 Asian eggplants, cut in 2½ inch sections
  • 1 bunch of long green beans, cut 2 inches long
  • 4 bunches of baby bok choy
  • 5 tablespoons toasted rice flour or flour of choice
  • ½ cup peanut butter or freshly ground peanuts
  • Water

Side Sauce:
  • 2 tablespoons cooking oil
  • 2 garlic cloves, pressed and minced
  • 1 large tomato, chopped
  • 1 tablespoon sugar or maple syrup
  • 1 tablespoon vinegar
  • 1 cup or small jar of black beans
