Gabonese Odika Soup,A Wild Mango Nut Delicacy (In French)

Ingredients:

  • Ground odika (wild mango nut)
  • Round eggplants, cut into 4 sections
  • Smoked mushrooms, sliced
  • Fresh tomatoes, sliced into large pieces
  • Okra, thinly sliced
  • Garlic, chopped
  • Onion, chopped
  • Water
  • Oil
  • Salt
  • Seasoning cube
Preparation:

  1. Heat up oil in a pan.
  2. Add ground Odika in, stir fry in high heat.
  3. Add fresh tomatoes and stir fry for a little bit. Add salt to taste.
  4. Stir fry till it smells nice.
  5. Add in garlic and onion, and stir fry for a little bit.
  6. Add mushroom, aubergine, some seasoning cube, mix well for a few minutes.
  7. Add 1/3 bowl of water.
  8. Can add some chili if you like.
  9. Mix well, cover with lid, simmer for 10 minutes.

Decoration:
* Add Odika stew into a plate. Sprinkle some chopped coriander on top.
* Can use with green or riped bananas, cassava , sweet potatoes, tofu, rice, or bread.
