VEGETARIANISM : THE NOBLE WAY OF LIVING
 
Sumptuous Iranian Vegetable Rice & Sesame Potato Tahdig (In Persian)

(For all ingredients, please use organic versions if available) (Serves 4)
3 cups uncooked rice
1 onion, chopped
1 medium green bell pepper
1 potato, chopped
1 potato, not chopped
1 cup slivered almonds
1 cup carrots, shredded
1 cup parsley, chopped
1 cup cauliflower florets
1 cup celery, chopped
1 cup corn
1 medium zucchini
1 medium aubergine
1–2 cups mung bean sprouts
1 lime or lemon
Turmeric powder
Sesame seeds
Salt
Olive oil



Directions (to prepare rice):
  1. Soaked the rice for 2 hours (so that when we add all the ingredients, our rice
    Will keep its texture and won’t be soggy
  2. Add the 3 cups of soaked rice into a sufficient amount of boiling water and boil it with some salt
  3. When the rice starts to float to the surface of the boiling water, that’s when we drain the water
  4. Pour it into a strainer
Directions (to make vegetable):
  1. Add some oil to the frying pan, and put it on medium heat
  2. Saut all the vegetables a little (because if they are wet, when we mix them with the rice, the mixed rice will become soggy)
  3. When the oil is somewhat hot saut the onions
  4. Add some turmeric powder and mix it in
  5. Add the celery (see which one is harder to cook)
  6. saut it a little so that its moisture evaporates
  7. Add the potatoes. By the time we fry the potatoes, you can see that most of the oil is gone. So it’s time to add the aubergine
  8. Add the chopped zucchini
  9. Add cauliflower (you can use mushrooms, or green peas)
  10. Add corn
  11. Add carrot
  12. Add the herbs, which is 1 cup of parsley
  13. Add almonds
  14. Add green bell pepper
  15. Add 1 (organic) lime to the vegetables
  16. Add the salt
  17. Add the curry powder

Directions (to make sumptuous iranian vegetable rice & sesame potato tahdig):
  1. Add sufficient oil to the rice pot
  2. Put the grated potatoes at the bottom of the pot, flatten it
  3. Add some salt at this stage
  4. Add the sesame seeds on top of the potatoes
  5. Add the rice and vegetables, layer by layer
  6. Let the rice steam for only 15 minutes
  7. While our rice is being readied, we saut the sprouts a little then add it on top of the rice
  8. While the dish is being cooked. Our vegetable rice is ready
  9. Put it on a big plate and decorated it with some fresh parsley
  10. The grated potatoes we added to the bottom of the pot with the sesame seeds can be served as a separate dish alongside our main dish
  11. Ready to serve
