Hearty Slovenian Ješprenj (Pumpkin Barley Stew)(In Slovenian)

  • ¼ Hokkaido pumpkins
  • Olive oil
  • 1 cup onion cut into small chunks
  • Barley
  • Soy meat, sliced into small pieces
  • Lentil beans
  • Corn
  • Parsley
  • 1 broccoli
  • Salt

  1. Broccoli, cut into pieces.
  2. Add some salt into boiling water. Add broccoli in to cook. Cover with lid.
  3. Add olive oil and chopped onion into a pot. Turn up the heat, stir fry.
  4. Add water, soy meat, parsley, lentil beans, and salt. Stir fry evenly. Turn down the heat, let cook.
  5. Pumpkins sliced thinly, discard seeds.
  6. Add pumpkins and corns into the stew. Stir fry evenly, then let it cook.
  7. Take out the broccoli from pot to make salad.
  8. Add the boiled broccoli water into the stew. Add barley. Stir evenly. Cover with lid, and simmer for 20 minutes.
  9. Season to taste.

* Pour stew into a plate. Serve with broccoli.
